It uses bread flour to produce to chewy texture, but it tends to dry quickly after a few days. So the best way is to bake fresh, to finish in like 2 days. You can stock the dough in the fridge and bake fresh each time.<br>

<br>
<ul>
<li>Bread flour</li>
<li>Store dough in the fridge for at least 4 hours or overnight</li>
<li>Good vanilla</li>
<li>Do not omit the salt</li>
<li>Use real butter, not margarine, not butter substitute, not butter blend, not recombined butter</li>
<li>Use real chocolate chips. The one with cocoa butter. Not palm compound.</li>
</ul>

It has habatussauda (Nigella sativa), cardamom, spikuk spices (mix spices), and canarium nuts. If I was to make it, in syaa Allah, I will add cinnamon and a dash of nutmeg and omit spikuk spices. Just a personal preference.<br>

<span style="color: #990000; font-size: x-large;">I </span>love that habatussauda brings heat and intensity, and loads of health benefit, which beautifully characterized the rather sweet and crumbly cookies. The specks of black seeds here and there created pretty sight, too.<br>

Banyak orang mencari resep chocolate chips cookies yang sempurna seperti yang dibuat Pepperidge Farm, Mrs. Fields, St. Michael, Famous Amos, atau mungkin kafe mungil di pedesaan Liverpool atau Tuscany. <i>Termasuk saya</i>. Terutama jenis soft baked: berukuran besar, dipanggang setengah matang, empuk agak liat (chewy), berjibun isi, aroma butter dan vanilla, keping cokelat premium, dan.. keriput yang sempurna!<br>

Chocolate Chips Cookies yang sempurna itu mensyaratkan penggunaan banyak bahan yang tidak ingin saya konsumsi. Bahan-bahan non-halal, trans fat, gula berlebihan, penguat rasa, pewarna, pengembang dan pengemulsi. Hampir mustahil bisa dibuat di dapur rumahan dengan pemakaian bahan artificial dan trans fat seminim mungkin.<br>

Here I share some pictures from the upcoming book, they are all whole cakes, all decorated as the book suggested, hoping you can learn from them, same things I learned through one year trying to capture the beauty of 101 minicakes and cupcakes. For one day session containing 5-20 food items to shoot, I used only 1-2 styling theme. So it was similar styling for 5 to 10 items, with small alterations here an there. Not only this strategy simplifies the work significantly, it also makes it easier for our editor and graphic designer to put them all together in one solid design concept. So, everybody's happy, and I hope our readers will be, too.<br>

They call it Pepaya Hawaii. But I don't think it was the same as Pepaya Hawaii I once found being sold at Total Buah. This pepaya was smaller, way smaller, and way sweeter.<br>

<span style="color: #cc0000; font-size: x-large;">I</span>ndonesian fruits are amazing. I always prefer our local grown fruits from the fake-fresh imported ones. Unfortunately not many of them make it to Jakarta. In many cases they are directly sent overseas to importer countries, usually the best variants in the bunch. And the locals were left with limited stock, only enough for them to eat, not enough crops to be sold to other parts of Indonesia --and Indonesia is indeed a big country.<br>

<span style="color: #990000; font-size: x-large;">I </span>was born the youngest of seven children and we had
a dearest nanny we considered as our
second mother. I mean, seriously. I
remember everytime she had to go mudik, my
sister and me, as the last youngsters under
her caretaking- yes, she took care all seven of us since we were newborn babies- my sister
and me would cry unstoppably, scream, kick,
temper tantrum all the way, didn't wanna let
her go, couldn't handle her going away. I still
remember the feeling. It was like half of your
soul was forcefully taken away from you, hurt
and dying. She was wonderful to us. She
loved us dearly and genuinely just like her own children, no
fakeness, no politics. Unconditionally, just
like my Mom did. And she remained our
closest "family" until the day she died at a
very old age, possibly more than a hundred.<br>

Halaman rumah kami selalu mempesona siapa saja yang datang berkunjung maupun sekedar lewat di depan rumah. Apapun yang mama tanam, selalu tumbuh subur! Bisa ditebak, halaman rumah kami hijau royo-royo, cantik oleh warna-warni bebungaan, juga penuh tanaman obat, bumbu, sayur-mayur dan buah-buahan. Belimbing sayur, pare, oyong, pandan, daun mangkokan, daun poh-pohan, pohon kunyit, kencur, cabe, daun sirih, lidah buaya, daun dewa. Pohon delima, anggur, pisang, jambu bangkok, jambu air, pepaya. Cocor bebek, kuping gajah, bunga sepatu, mawar, melati, sedap malam, gladiol, bougenville, kana, dan bunga-bungaan lain yang saya tidak tau nama-namanya. Koleksi anggrek memenuhi sisi dinding halaman yang berbatasan dengan tetangga dan pagar rumah. Pohon belimbing besar dan tinggi berbuah sepanjang tahun, biasa saya panjat dan duduki dahannya sambil mengunyah belimbing matang segar yang baru dipetik. Kami pernah memiliki pohon pakis yang dirawat mama sejak masih tunas sampai tumbuh besar dan berharga mahal, anggrek hitam yang langka, pohon sakura merah jambu yang bunganya sungguh rimbun ketika berbunga, hingga 3 batang pohon cengkeh besar dan tinggi di halaman! Saya ingat ketika pohon cengkeh itu berbunga, hasilnya sampai bisa dijual dengan hasil yang lumayan :).<br>

<span style="color: #cc0000; font-size: x-large;">S</span>aya biasa melihat mama mengenakan sepatu botnya, duduk di atas dingklik di halaman rumah. Berbalut sarung tangan karet, tanpa ragu tangannya meraup tanah, menyekop pupuk kandang, mengatur pot, memangkas ranting, wajahnya serius tapi berseri-seri, tenggelam dalam suka cita merawat semua tanaman dengan penuh cinta!<br>

<span style="color: #cc0000; font-size: x-large;">N</span>ah, kebetulan kemarin saya membaca <a href="http://www.soylution.co.id/soylution_center/living_healthy/264/Tips_Berkebun_untuk_Menurunkan_Berat_Badan" rel="nofollow" target="_blank">sebuah artikel</a> yang menerangkan hubungan antara kegiatan berkebun dengan penurunan berat badan. Ternyata aktifitas ini membakar kalori lumayan banyak. Seketika saya teringat mama dan kebun indahnya. Bagaimana tekunnya beliau merawat setiap tanaman, pastilah beratus-ratus kalori terbakar tanpa perlu pergi ke gym. Tips-tips dalam artikel ini sungguh cihuy, menyadarkan saya bahwa berkebun bisa jadi sebuah latihan fisik yang bisa kita jalankan tanpa merasa berolahraga, asalkan kita membiasakan diri memperhatikan beberapa hal penting. Seperti memulai dengan perlahan, memperhatikan postur dan posisi tubuh, menggerakkan tubuh dengan stabil dan halus, dan menyelaraskan antara gerakan otot perut dan punggung. Dan yang paling penting, atur pernapasan. Lalu tiap 10 menit berdiri dan meregangkan lengan, kaki, dan punggung. Ah, serasa full sweat yoga!<br>

A chocolate chips recipe using full wholewheat flour. I was drooling right away I couldn't wait to try baking it. It was a lazy afternoon today, typical afternoon when we had to stay home due to the unpredictable stormy weather recently. I got butter and wholewheat flour waiting to use up. Got whitesugar-palmsugar-cinnamon mixture leftover from making churros the other day (which by the by, never had the chance to blog about, 'coz it's all gone before even finished cooling, oh my..). Got dark 70% couverture chocolate button, then I baked away.<br>

Seriously, you can use any bread recipe you like, even biscuits, which I actually plan to make one with. The "monkey" is the shaping process. You ball the dough, dip it into melted butter, throw it in cinnamon sugar mixture to coat, arrange in a pan. You can add nuts or raisins to the cinnamon, add honey to the melted butter, anything you fancy. You can even fill the ball first before dipping and coating, i'm thinking.. cheese cream?<br>

I know I always appreciate any camera, how simple it is, how complicated it is. Every camera is special and personal. As if it has its own life and character that communicates and adapts accordingly to its master. But I gotta say I was blown away by this baby.<br>

I took it to the Food Photography Workshop where Citra, my foodstylist, and I had fun playing with it and produced great food photos. I also took it with me on my diving trip to Tulamben, Bali, as I thought my DSLR would be too bulky to carry.<br>

<span style="color: #cc0000; font-size: x-large;">O</span>ne of my bad habits is that once I start working on anything, I tend to be unable to stop until I finish it all. So I often had a late lunch. Not a healthy habit, I know.<br>

<span style="color: #cc0000; font-size: x-large;">L</span>iving in a dense area with a university right behind my kitchen, eating places swarm around my neighborhood like ants to candy. I could easily buy whatever I want for my meal, and I do, from two of them which had passed my inspection as being healthy enough, descent enough, and hygienic enough to eat. Although sometimes I'm not really sure about the latter. I usually was exhausted from work, so I just let go. As long as it has enough raw vegetables and is sold in a house, not by the street where carbon monoxide is expected to be all over, I can live with it.<br>
<br>
<span style="color: #cc0000; font-size: x-large;">B</span>ut when I have the energy to prepare my meal, and I often do, I just open my fridge and improvise from there. One afternoon, I had all these beautiful free range eggs, grainy mustard, gorgeous red and green veggies, and I was sold. Turned them into a delish omelette and red-green salad, and I had a beautiful healthy late lunch.<br>
<br>
<span style="color: #cc0000; font-size: x-large;">T</span>he name Bang-Jo salad I got from when I was on a trip to Jepara and was looking for a direction. A man said, "Go straight until the bang-jo." I frowned. Later I found out that bang-jo was a short for abang-ijo, means red-green in Javanese, means traffic light. :)<br>

We have to finish wrapping up material for the upcoming book of <a href="http://ncc-indonesia.com/buku.html">NCC</a> at the beginning of Ramadhan, that alone took me more than a week to recover. Then I still taught a few classes during fasting month, another slow recovery. Yet, I still craved to have obligatory cookies for idul fitri. No, it's not nastar nor kaasstengels. For me, those obligatory cookies are bangket :) Haha, you might be sick of this word by now, I don't care :D<br />

<span style="color: #38761d; font-size: x-large;">A</span>round mid Ramadhan last year, I baked <a href="http://pennylanekitchen.wordpress.com/2009/10/31/as-crumbly-as-can-be/">Bangket Kacang</a> using unpeeled peanuts, coz there is no way I would leave that beautiful tasty skin behind. It created the pretty specks on my bangket and it tasted better to my palate. I baked them again this year, around the same time of Ramadhan, along with its peer, <a href="http://pennylane-kitchen.blogspot.com/2012/08/bangket-susu.html">Bangket Susu</a>. The photo above was from last year, which later became the inside title cover of my <a href="http://pennylanekitchen.wordpress.com/2012/03/01/just-released-food-photography-for-everyone-yes-everyone/">book</a>.<br />

<span style="color: #38761d; font-size: x-large;">S</span>o much for the plan, it wasn't quite agreed by a few customers. Allah The Most Beneficent. Some of them called, some of them twitted. I never thought I would feel guilty rejecting their orders, so I referred them to a friend instead, hoping they would be as satisfied. That worked for common cookies like Nastar, Kaasstengels, and such. But when they insisted on ordering <a href="http://pennylanekitchen.wordpress.com/2008/10/21/chocolate-cookies-my-way/">PennyLane Cookies</a>, I just had to fulfill it. It's my call, my holy mission on earth.<br />

<span style="color: #38761d; font-size: x-large;">S</span>o, yeah. There I was, in my kitchen again, having fun baking the chocolate cookies, mound after mound, tower after tower. Not much, 12 towers in total, but satisfying as the sun. Allah The Most Compassionate. I have to say though, it was one of the greatest temptation that I could not lick the batter!<br />

I use it for food photography purpose and never tried any recipes in it. Until one night I was thinking it's time for the book to fulfill its destiny in my hand.<br>

<span style="color: #cc0000; font-size: x-large;">H</span>ow I wished we grow hazelnuts locally in this country, coz a jar of homemade Nutella won't hurt at all. But I love peanuts just the same. I can finish a jar of Skippy crunchy peanut butter by myself and not feel guilty at all :). So when I poured the shiny chocolate spread into 2 half-pint mason jars, I couldn't help but feeling gleeful inside, almost could feel the dancing of two most delightful food in the world on my tongue already.<br>

When I read the review, it didn't take long before I ran to baking store and be back in my kitchen to try the recipe. By the time the sun smeared the sky purple in the afternoon, I've had a wondrous yeasty fragrant kitchen and the best home-baked wholewheat loaf for my afternoon tea. Could life be any sweeter?<br>

<span style="color: #cc0000; font-size: x-large;">I</span>'d been in quest for a good one-hundred-percent wholewheat bread for quite some time that I almost gave up. They're always too dense, too dry, didn't taste really good, or I had to give up some part of the flour for white flour. But this, I love! Got it from <a href="http://www.kingarthurflour.com/">King Arthur Flour</a> website, tweaked a little bit, and I have a foolproof recipe I always can count on. Been baking this several times now and for me it's a life saver. Can't count on the so-called wholewheat loaf they sell in the bakeries, let alone supermarket. You have to find a European style bakery to get a full wholegrain bread in Jakarta. Last time I checked, only Vineth Bakery still sells this thing. Others only sell the fake ones, the ones contained only about 10-20% wholewheat flour in them. And they don't even taste good.<br>

<span style="color: #cc0000; font-size: x-large;">O</span>ne afternoon I enjoyed it with homemade chocolate-peanut spread and fresh cheesecream, another time I had it with vegetables and homemade mayo for lunch. Call me wholewheat crazy, I'm happy.<br>

For this coming idul fitri, I have nothing in mind but bangket after bangket. I planned to bake Bangket Susu, Bangket Kacang and Bangket Jahe <i>--which by the way, I have found the best recipe of--</i>, but turned out only accomplished the first two. And finished them all even before idul fitri. Couldn't help it!<br>

<span style="color: #cc0000; font-size: x-large;">T</span>his is the famous Bangket Susu by <a href="http://nadrahshahab.multiply.com/">Nadrah Shahab</a>. Other than the already famous virtues of bangket, this one particularly boasts the milky aroma that surprisingly goes really well with the distinctive character of savor of sago flour. Two years ago, <a href="http://ncc-indonesia.com/">Natural Cooking Club</a> took the community by the storm with its <a href="http://nccbangketweek.blogspot.com/">Bangket Week</a>, where the members deliriously baked nothing but bangket to respect and honor this traditional cookies of Indonesia. I've had it a year before when Nadrah sent me one jar, along with a jar of <a href="http://pennylanekitchen.wordpress.com/2009/10/31/as-crumbly-as-can-be/">Bangket Kacang</a>. So when the Bangket Week was on, the two bangkets were stars in a matter of seconds.<br>

<span style="color: #cc0000; font-size: x-large;">T</span>he original recipe uses margarine which I initially planned to substitute with butter. I was run out of butter, so I used oil instead and it produced different texture than those made of butter or margarine. When the oil mixed with flour, it created lumps that later when baked turned to be these wonderful crunchy things inside the crumbly cookies, things the original one doesn't have. On the exterior, they created beautiful cracks adorning each cookie beautiful like pretty laces. Oh, how lovely little nibble!<br>
